Vegetarian BurgersVegetarian Burgers![]() Makes 12 patties (serves 6)
Boil and mash potatoes (don’t add milk or butter). While the potatoes are cooking spray a non stick pan with oil and cook onion and garlic until soft.
Add onion mixture to mashed potatoes together with the rest of the ingredient, apart from the couscous. Mix well and let stand about 10 minutes to firm up. Shape mixture into 12 patties and coat in couscous. Spray a non-stick pan with oil and fry patties a few at a time, re-spraying the pan between batches. Cook until brown each side, the couscous will form a crunchy coating. Serve with a large salad. |
