Super Quick Pea Soup

Peas are good for you!

Peas are packed with nutrients and are always there to make something delicious. You can make pea soup, stir fry using peas, curry and you can add them to salad's. Peas add flavour and colour.  Frozen or fresh peas are better than canned.

Try this quick recipe

  • 1 kilo bag frozen peas, mint or plain
  • 1 litre stock
  • 1 packet Maggi cream of chicken soup
  • 2 onions, chopped
  • 1 tsp crushed garlic
  • 1 tsp curry powder
  • black pepper
  • Optional: 1 packet Kiwi Eye Bacon or 1 packet Signature Range short cut rindless bacon

Heat a large non stick saucepan and spray with cooking spray. Add onion and garlic and cook about 5 minutes over moderate heat, do not brown.

Add everything else apart from the bacon and bring to the boil. Reduce heat and simmer for 10 minutes then puree in a food processer.

Cook eye bacon in a dry non stick pan until crispy and then chop finely and scatter on top of the soup bowls.

To make this a vegetarian dish use vegetable stock, omit soup powder and use soy bacon slices.

Approximately 150 calories per serve without bacon and another 30 calories per serve with bacon.
