Chunky Chicken and Vegetable Soup (serves 6)
Put the liquid stock, stock powder and water mixed together, chopped chicken, herbs and pepper and soup mix in a large non stick pot and bring to the boil. Turn down and simmer about 15 minutes. Add the chopped pumpkin and simmer for a further 45-60 minutes, or until the split peas etc in the soup mix are softened. Taste and add salt if necessary. |
