This is a really great lunch


Tips
Use cold meat to replace the tuna, add whatever salad ingredients you like...

Capers
Parsley
Fennel
Mint
Smoked paprika
Gerkins
Pickled onions






Swap the potato for kumera or pumpkin or even low GI yams!


Ingredients
6 hard-boiled eggs
4 medium boiled potatoes (both can be cooked the night before)
150g flaked tuna
½ onion diced
lettuce leaves
2 tomatoes
4 tablespoons low fat mayonnaise/dressing

Directions
Chop the eggs and potatoes into bite sized pieces. Mix in onion, tomato and salad greens. Combine with low fat mayonnaise or low fat ranch dressing.

300-320 calories per serve ( serves 4) 16 -18 grams of protein
