Quick Healthy Savoury Mince
Tasty and HealthyLeftovers can be made into filo strudels, or pies, or could be used as filling for jacket potatoes. Also great on toast for breakfast. Ingredients500g lean beef mince 1 medium onion 1 tsp crushed garlic 2 medium carrots, peeled and chopped ½ cup frozen peas 2 tbs tomato sauce 2 tbs soy sauce 2 tbs Worcestershire sauce 1 pct Weight Watchers gravy made up with 250 mls boiling water 1 tbs chutney Salt and black pepper to taste Optional: Extra chopped vegetables such as mushrooms, courgettes and beans could be added to extend the mince Place mince in metal colander and pour boiling water over and break up with a fork – this helps to remove excess fat and separate the mince. Spray a non stick pan with cooking oil spray and add chopped onion, mince and garlic and cook about 5 minutes. Add the rest of the ingredients, cover, bring to the boil, then reduce heat and simmer about 20 minutes, stirring occasionally. Serve with extra fibrous vegetables. |
