Moroccan Mince
This is beautifulServes 4, make sure you have salad or vegetables on the side. 600g lean mince large onion finely chopped 1 tsp grated root ginger (from a jar is fine) 1 1/2 tsp curry powder 1 tsp Moroccan spice 1 cup frozen peas 2 tbs fresh mint chopped 400g can crushed tomatoes salt & ground pepper Low fat plain yoghurt to serve (optional) Heat a non stick pan, spray with cooking spray and gently saute mince and onion until browned. Add ginger, curry powder and Moroccan spice and cook a few more minutes. Add remaining ingredients and simmer 10 minutes. Serve with a blob of plain yoghurt and lots of fibrous vegetables. |
