Healthy Roast Pork and Veges - Quick MealApricot Pork Fillet and Roast Vegetables"two ingredients and ready in under an hour"![]()
Place whole pork fillet(s) in a baking dish, pour over apricot sauce and put in pre-heated oven. Scrub and prick medium size jacket potatoes and/or kumara and cut pumpkin into medium size chunks. Pre cook in microwave until almost tender then place on oven tray alongside pork. Cook approximately 45 minutes or until the pork is cooked through. Serve with either a mixed salad or fibrous vegetables. Consider cooking extra to keep as leftovers the next night! |
