Green Beef Curry![]() Serves 4
Spray a non stick pan or wok with cooking spray oil and sauté beef for 3 minutes. Add in curry paste and cook another minute. Add the rest of the ingredients except the cornflour and water. Bring to the boil, then simmer until ingredients are just cooked, about 5 minutes. Add cornflour/water mixture and bring to the boil again. Taste and season with salt and pepper if necessary.
TIP: To make this a vegetarian dish use beef stock and replace the beef with 400g of tofu. |
