Place the pork in a baking dish and brush the meat with the sauces which have been mixed together. Reserve any leftover glaze. Cover the baking dish with tin foil and bake at 180 degrees for about 30 minutes then remove foil, baste the pork with leftover glaze and finish cooking uncovered - about another 10 minutes or until cooked through. Do not overcook or it will be dry. Let stand covered for about five minutes and then slice thinly on the diagonal.
While the meat is cooking, make the most of having the oven on and cook yourself some 'roasties'. Cut into small chunks a selection of vegetables such as onions, carrots, courgettes, pumpkin, capsicum, whole garlic cloves, etc. Spray an oven dish with cooking oil spray, turn the vegetables and spray again. Put into the hot oven and cook for about 40-50 minutes. You can add rosemary or other herbs to the baking dish for extra flavour. Serve the pork with either additional apricot sauce or some apple sauce and a good selection of fibrous vegetables. |
