Cheese and Corn Fritters

 





  •  400g can corn kernels
  • 1 small onion, finely chopped
  • 2 eggs, separated
  • 250g light cottage cheese
  • 1/2 cup trim milk
  • 1 tsp sweet chilli sauce
  • salt & ground black pepper
  • 8 tbs flour
  • 1 tsp baking powder
  • 50g grated cheese (preferably light tasty)
  • oil spray
  1. Mix together onion, corn, egg yolks, cottage cheese, milk, chilli sauce and salt and pepper. Add sifted flour and baking powder, plus the cheese and mix well.
  2. Beat egg whites until soft peaks form and gently fold into corn mixture.
  3. Spray a non stick pan with oil spray and cook large tablespoons of mixture.
  4. Makes about 18 fritters. Three fritters = approx. 225 calories and 16.5g protein.
  5. Serve with a nice chutney and salad.
  6. 3 fritters 225 cals
  7. 1 tbs chutney 40 calories
  8. 2 cups salad 50 calories
  9. Total 315 calories. Add a kiwifruit or mandarin at about 40 calories each = 355 calories.
