Rhubarb and Custard Parfait

Serves 2
only 154 cals per serve

300g rhubarb
1/3 to ½ Weight Watchers strawberry jelly (according to taste)
1 packet Weight Watchers vanilla custard
4 level tablespoons of vanilla Zilch (sugar free) ice-cream

Chop rhubarb and cook until soft. Add jelly crystals to taste and stir well until dissolved.
Make up Weight Watchers custard as per instructions on packet.
To assemble: Take two long parfait glasses and 2/3 fill with rhubarb. Share the custard between the glasses and then spoon the Zilch icecream on top.
