Soy and Honey Chicken

Ginger for good health


The uses of ginger as a digestive aid can be largely attributed to the presence of gingerols and shogaols which help neutralise stomach acids and enhance the secretion of digestive juices and tone the muscles of the digestive tract.

Ingredients



  • 600g skinless chicken breasts - cut into strips
  • 2 medium zucchini sliced on the diagonal
  • 1 medium carrot cut into thin sticks
1 red capsicum sliced into strips
  • 1 medium onion sliced
  • 1-2 cups mushrooms sliced (optional)
  • 1 tsp crushed garlic
  • 1 tsp crushed ginger
  • 1 tbs honey
  • 3 tbs soy sauce
  • 2 tsp chicken stock powder
  • 1 tbs cornflour
  • 1 1/2 cups water

Instructions



Step 1 Spray a large fry-pan with cooking spray and saute chicken, onion, garlic and ginger for about 3 minutes.

Step 2 Add remaining vegetables and cook a few minutes longer, stirring, until just cooked, but not soft.

Step 3 Add soy sauce, honey and chicken stock to pan, then mix cornflour with water and add to pan. Bring to boil then simmer for 2 minutes and serve.

Serves 4
