Smoked Chicken with Roast Pumkin and Tomato Puree

Smoked Chicken is Versatile


This easy recipe will give four good serves. Serve with extra vegetables.









Ingredients

  • 500g pumpkin cut into bite sized chunks
  • 1 tbs oil
  • Medium/large onion finely sliced
  • 2 medium zucchini, cubed
  • 1 1/2 cups sliced mushrooms
  • 300g smoked chicken breast (or 300g cooked chicken) cut into bite sized chunks
  • 1 tsp smoked paprika
  • 550g jar pasta sauce
  • 1/2 cup water approximately

Salt and black pepper to taste

Heat oil in electric frypan or other covered non stick pan and roast pumpkin cubes until just cooked, approximately 15 -20 minutes, depending on the size of the cubes.

Remove pumpkin from pan and add onion and cook for 2 - 3 minutes, until softened. Add zucchini and mushrooms and cook until just tender. Add smoked paprika, chicken and pasta sauce and if the mixture is too thick, shake up the water in the empty pasta jar and add to the mixture. Simmer for about 15 minutes then add salt and pepper to taste.

Serve with extra vegetables
