Kumara and Chicken Curry

Serves 4 Protein 33g per serve Calories 360 per serve.






  1. 500g lean chicken - diced
  2. 1 cup low fat natural yogurt
  3. 3 heaped tsp corn flour
  4. 1 tsp chicken stock
  5. Crushed garlic ( to taste)
  6. 1 tsp ginger
  7. 1 tsp coriander
  8. 1 tsp cumin
  9. 1 tsp turmeric
  10. 1 tsp garam masala
  11. Chilli to taste
  12. 5 cups veges (carrots, beans, zucchini, onions, cauli, broccoli, celery) or we use frozen beans and baby carrots.
  13. 500g Kumara (pre cooked) microwave 3 minutes.

In a non-stick pan stir fry chicken on high till brown. Drain then add garlic and spices to chicken and cook for 1-2 minutes. Add 11/2 cups boiling water and vegetables, cook till vegetables are tender. Add corn flour to yogurt and add to pan, turn heat down and stir till sauce thickens.

Add sliced cooked kumara and serve.
A great winter dish.
