Chunky chicken and vegetable soup
Chunky Chicken and Vegetable soup - makes 6 good servesIdeal for lunch, only 265 calories and 20 grams of protein per serve. Ingredients 600g chicken 2 medium onions 1 packet of Kings Old fashioned soup mix - roasted capsicum and pumpkin 1 litre Campbell's Chicken and herb real stock (tetra pack) 1 tablespoon of chicken stock powder + 2 cups water ground black pepper - and salt to taste - not much salt is needed 1 teaspoon of mixed dried herbs 400g chopped pumpkin chopped parsley if you have it Put the liquid stock, stock powder and water mixed together, chopped chicken, herbs and pepper and soup mix in a large non stick pot and bring to the boil. Turn down and simmer about 15 mins then add the chopped pumpkin and simmer a further 45 - 60 mins, or until the split peas etc in the soup mix are softened. Taste and add salt if necessary. Calories approximately 265 per serving (6 serves) and approx 20g protein - ideal for lunch. |
