Chicken with Bacon

Lay a slice of Kiwi Dansk Eye bacon on top on each chicken breast (no need to pin it on, it stays on) and lay chicken breasts in an oven proof baking dish. Mix up 1 tsp chicken stock with about 200mls hot water and pour over the chicken breasts to keep moist whilst baking.
Bake 180 deg for about 35-45 minutes or until cooked through. Do not overcook or the chicken will be dry. This is lovely sliced and served cold the next day too.
